In addition to all your reasons to limit it, If you are a Type 1 diabetic, 2 1/2 tbsp flour = 1 tbsp sugar = 1 regular slice of bread, or 1 unit of insulin, and 1/3rd of an entire meal. Most restaurant dishes are off-limit.
Not only that, it is fast-acting, like candy, causing quick blood-sugar spikes instead of slow-acting like whole-wheat bread.
